In January 2008, Glen Bent and his wife Faye opened Cariba restaurant. Glen, the executive chef/proprietor, has worked in restaurants around the world, including the renowned Sandy Lane hotel.
Cariba is tucked away in Clarke’s Gap, just off of the coast road in Derricks, St James. It’s in a little chattel house surrounded by a sweet lime hedge. The restaurant is relatively small but intimate and serves “modern Caribbean cuisine with an Asian twist” and on Fridays, sushi and tempura are served. The restaurant’s décor is simple but tasteful and is popular with tourists and locals alike.

A genuine neighbourhood restaurant
Although Cariba has only been open for a relatively short time, it has already gained a strong following as a genuine neighbourhood restaurant with great food and good service. The dishes are an inventive combination of flavours, reflecting Glen Bent’s culinary flair, and are interesting and affordable. I’d highly recommend the shrimp curry with coconut rice – just the right combination of spicy with a nice hint of sweet!
The restaurant is warm and welcoming with a comfortable relaxed atmosphere and well worth a visit.
